Crunchy Sweet Potato "Chips"

Ingredients
1 large sweet potato, peeled, and sliced about 1/4" thick2 tsp sugar blended with 1/2 tsp cinnamonButter flavored cooking spray
Directions
1. Spray cookie sheet with nonstick spray (lined with foil to save clean up time). Preheat oven to 375 degrees.
2. Arrange the sliced potatos on the sheet. Use half the cinnamon sugar to sprinkle the slices. Bake for 12 minutes.
3. Remove from oven. Spray the slices with a little more cooking spray and turn them over. Use remaining sugar to sprinkle the new side. Bake about 6-8 minutes--remove when they look a little crispy and the sugar is bubbly.
