Layered Enchilada Bake

1 lb ground turkey1 large onion, chopped2 C. thick and chunky salsa2 C. black beans (1 C. dried beans, cooked and drained, to equal 2 C. cooked)1/4 C. zesty Italian dressing2 T. taco seasoning mix8 flour tortillas (6 inch)1 C. sour cream8 oz. shredded 4-Cheese Mexican style mix
Heat oven to 400.
Brown meat with onions on medium-high heat; drain. Stir in salsa, cooked beans, dressing, and taco seasoning mix.
Arrange 4 tortillas (cut as needed) on bottom of 13x9 inch baking dish that has been sprayed with cooking spray. Cover with layers of half each of meat mixture, sour cream, and cheese. Repeat layers. Cover with foil.
Bake 30 minutes. Remove foil. Bake an additional 10 minutes, or until casserole is heated through and cheese is melted. Let stand 5 minutes before cutting to serve.
