Vegan "Naked" Burrito

180g extra-firm tofu1 15oz can no-salt-added black beans, rinsed & drained1 bag boil-in-bag brown rice (approx 2 cups cooked)1 bag Bird's Eye Steam Fresh Super Sweet Corn (approx 360g).5 cup low sodium vegetable broth.25 cup fresh cilantro1 tbsp cayenne pepper1 tbsp ground cumin1.5 tbsp paprika2oz shredded soy cheese (optional, but in the nutrition info)
Cook rice according to directions. Cook corn according to directions.
Dice tofu, place in high-walled pan, and brown over medium-high heat. Add remaining ingredients except for cheese. Stir until combined.
When sizzling, lower heat to low and cover. Let it cook for 5 minutes. Stir and serve with cheese (if desired).
Makes 4 one-cup (aporox) servings.
