Quinoa & Lentils

Ingredients
2 cups quinoa, cooked (about 1 cup uncooked)2 cups lentils, cooked (about 1 cup uncooked)2 tbsp olive oil1/4 cup pine nuts1 medium onion, chopped1/4 cup lemon juice1/4 cup fresh parsleysalt & pepper as needed
Directions
Cook 1 cup quinoa and 1 cup lentils according to instructions.

Saute onion and pine nuts until lightly browned.

When finished, mix quinoa, lentils & onions.

Add lemon juice, parsley and olive oil. Stir.

Serve hot & enjoy!

    I haven't tried to freeze this recipe, but I'm sure you can! It'd be great for lunchtime, and the recipe makes a lot so it could last you about a week.
