Tequila Lime Shrimp

1/3 cup - Lime Juice1/2 tsp - Cayenne Pepper, powder (less or none can be used if you are sensitive to spicy foods)3/4 tsp - Sugar1/2 tsp - Cornstarch3/4 fl oz - Tequila1/4 cup - Cilantro, fresh, chopped1 tbsp - Olive Oil2 cloves - Garlic, minced1/4 tsp - Salt1 lb - Shrimp, raw, shelled & devained1/4 cup - Tomatoes, diced
1) In a small bowl, combine lime juice, cayenne powder, sugar, cornstarch and cilantro; set aside.
2) Heat oil in a large nonstick skillet over medium heat. Add garlic and salt; cook, stirring, until garlic is fragrant, about 1 minute. Add shrimp; sauté, until shrimp turn pink, about 4 minutes.
3) Add tequila and flambe (set on fire with candle lighter) till flame burns out. (SEE NOTE)
4) Add lime juice mixture and tomatoes to same skillet and place over high heat. Cook until alcohol burns off and sauce thickens, stirring and scrapping sides of pan, about 2-3 minutes.
Serve over Rice or pasta if desired.
OR Serve as basis for soft tacos.
