Ingredients
Directions
6 skinless, boneless chicken breast halves1 can of Campbell's 98% FF Cream of Chicken Soup1 8 oz. package Light Philly Cream Cheese1 package Good Seasons Zesty Italian Dressing Mix1/2 cup water'1 small onion, chopped finely1 tsp. fresh garlic, minced1 cup sliced or quartered mushroomsServe with rice or noodles
Spray the bottom of a crock pot lightly with Pam. Add onion and garlic. Add chicken breasts. Cut cream cheese into small pieces and add to pot. Combine remaining ingredients and pour over chicken.
Cook on High for 1-3 hours and then reduce heat to Low and cook another 2-4 hours, or until chicken pulls easily apart with a fork. Remove chicken from sauce and whisk lightly to smooth it out and completely combine cream cheese into liquid.. Add a bit of milk if it seems to thick. Pull chicken into bite-sized pieces and add back to sauce.
Serve over rice or noodles and a green veggie. It's great the next day wrapped into a 100 calorie "Flat Out" whole grain/flax as a sort of creamy chicken burrito/enchilada :)
