Extras Per Sandwich: 2 slices Whole Grain Bread2 medium slices tomato2 inner leafs romaine Filling - enough for 5 Sandwiches2 cans White Chunk Chicken Breast1/2 cup finely diced Celery1/2 cup Yellow Onion4-5 diced Artichoke Hearts5 slices sliced Dill Pickles6 Tbs Light Sour Cream4 tsp Brown Spice Deli Mustard4 tsp Yellow Mustard(Add soft tofu if you desire a creamier ck salad/not included in nutritional info)
Drain and rinse canned chicken (to reduce sodium) and place in skillet over medium heat. Add spices if desired (I like Webbers Kicken' Chicken and McCormick’s Montreal Chicken). Cook until slightly browned and let cool.
While cooking chicken, dice celery, onion, artichoke hearts, and dill pickles. Add all diced vegetables, mustard, deli mustard, sour cream, and cooled chicken to a bowl and mix. Your filling is complete.
Lay out 1 slices of bread, add tomato slices and romaine leafs. Add filling and top with the other slice.
For those that are carb conscious, only use one slice of bread or use the romaine leafs as wraps for the filling.
Refrigerate leftover filling.
