Gluten-Free Amaretti Cookies

Ingredients
2-8 ounce cans gluten-free almond paste (solo brand)2 extra-large egg whites1/2 cup + 1/8 cup superfine sugar1/4 tsp almond extract36 marcona spanish almonds
Directions
1. Put almond paste in a food processor and pulse 3x to break up the paste.
2. Add the sugar and pulse until combined.
3. Add egg whites and the extract; pulse until the mixture is combined.
4. Make 1-inch balls and place 2 inches apart on a lined baking sheet.
5. Dip fingers in extra sugar and press cookies into 2-inch rounds.
6. Place a marcona almond in the center of each cookie.
7. Bake 18-20 minutes, until firm and lightly browned. Turn off the oven and leave the cookies in another 5 minutes.
