Purple Potatoes and Snap Peas

Ingredients
* *Snap peas, 2.5 cup (remove) * Feta Cheese, .25 cup, crumbled (remove) * mint leaves (fresh) (10 leaves), 1 serving (remove) * *Extra Virgin Olive Oil, 2 tbsp (remove) * balsamic vinegar, 4 tablespoon (remove) * Potatoes, purple (1 lb), 1 serving (remove)
Directions
Simmer potatoes until tender (about 20 min). Drain potatoes.
Bring water to boil and blanch snap peas until crisp-tender (about 1 min). Drain peas and rinse in cold water.Dry with paper towel.Cut potatoes into quarters. Toss together potatoes, peas, vinegar, oil, mint, feta cheese. Salt and pepper to taste.
