Ham, Scalloped Potato & Leek Casserole

Ingredients
6 thinly sliced, medium-sized par-boiled potatoes.75lbs Smiths 97% fat free ham (3 pre-packed slices)1 leek, cleaned and thinly sliced1 cup sliced onion (1 medium onion)2 tbsp. flour1 tsp. dried parsley1 tsp. dried chives1 tsp. salt1/8 tsp. pepper2-3 tbsp. butter (cut into 8-10 dots)1 1/2 cups 1 % scalded milkpaprika and parsley for sprinkling
Directions
Preheat oven to 375°F.

Grease a 2 qt. covered casserole dish. Parboil potato slices over medium heat in unsalted water for 5 minutes. Strain and rinse briefly under cold water to stop cooking process.

In a small bowl, blend together flour, parsley, chives salt and pepper. Whisk in milk.

Strain potatoes.

In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer. Dot each layer with some butter, reserving enough potatoes and butter for the top layer.

Pour the milk mixture over the top. Sprinkle with paprika and parsley.

Cover casserole and bake in 375°F oven for 45 minutes covered, then 15 minutes uncovered.
