Tomato Soup

Ingredients
8 medium tomatoes1 cup red pepper sliced in wedges5 cloves garlic1 onion, sliced in wedges1 tbs olive oil1 tbs black pepper1.5 cups water
Directions
Slice tomatoes in half and place in glass baking dish cut side up. Slice onions and place in between tomatoes in the baking dish. Slice the red pepper into wedges and place in baking dish. Place garlic in baking dish. Drizzle with olive oil. Sprinle 1 TBS black pepper on top.

Bake in 400 degree oven for 40 to 60 minutes until soft.

Puree cooked vegetables with 1.5 cups of water in a blender until smooth.
