"Fried" Brown Rice Stir Fry

Ingredients
1 Tablespoon sesame oil (or peanut oil or canola oil)4 Cups brown Basmati Rice.5 cup chopped onion1 Tbs grated ginger root2 cups chopped broccoli1 carrot, diced1/2 tsp salt1 cup zucchini, diced2 cloves garlic, chopped1 cup green peas1 cup chopped bok choy or chopped fresh spinach1/3 block tofu, diced1 cup diced scallion1/2 cup water chestnut, diced4 Tbs soy sauceBlack pepper (to taste)
Directions
Cook rice ahead of time
Also ahead of time, dice tofu and leave marinating in 1.5 table spoon soy sauce
Optional: scramble egg ahead of time and add in later

1. Heat wok or deep skillet. Add about 1 Tbs sesame oil (or peanut oil, or canola oil)
2. Add onion, ginger, carrot and salt, stir fry for a minute or two
3. Add zuchinni and stir fry for another minute
4. Add garlic, peas, bok choy (or spinach) and tofu, cook for another minute
5. Add rice, scallions and water chestnut
6. Optional: add fried egg
7. Add remaining soy sauce and spices to taste
