*Peanut Oil, 1 tbsp *Cumin seed, 1 tspRed Ripe Tomatoes, 1 cup, chopped Turmeric, ground, 1 tsp ( yellow turmeric powder)Chili powder, 1 tbsp (red chili powder)*Coriander seed, 1 tsp *Coriander leaf, dried, 1 tbsp Cabbage, fresh, 3 cup, shredded Baked Potato (baked and diced potatoes), 3 potato (2-1/3" x 4-3/4") *Cumin seed, 2 tspGinger root, groundGarlic (3 cloves, crushed)Salt, 1 tbsp Water, tap, 1 cup (8 fl oz)
Heat Oil in a pan. Add cumin seeds and coriander seeds and let them crackle. Add crushed ginger and garlic and as soon as they crackle, add chopped tomatoes. (Be careful as garlic burns easily).
Let tomatoes cook and add turmeric powder, red chilli powder and salt to taste. (You can add Indian Garam Masala, Coriander powder and Cumin Seed Powder to spice it up further.)
Once tomatoes are done, add finely diced baked potatoes and stir. Add shredded cabbage and a cup of water and stir. Add 1 Cup water and let the cabbage cook until it goes soft and blends with the other veggies and spices.
Garnish with Coriander leaves and serve hot with Indian Bread.
