Spinach, Mushroom and Parmesan Omlette

Ingredients
Omelet (egg), 2 largeSpinach, fresh, 1 cupMushrooms, fresh, 1.5 cup, pieces or slicesParmesan Cheese, grated, 4 tbspParsley, 1 sprigsButter, unsalted, 1 tbspSalt & Pepper
Directions
Whisk 2 eggs in a bowl and add salt & pepper to taste. Chop 1 sprig of fresh parsley and add to eggs, mixing again to avoid clumping. Add butter to frying pan and turn on heat, then moving pan around to coat pan in butter. Add eggs to pan and let cook for 1 minute. Add spinach and mushrooms and top with parmesan cheese to one side of eggs. Let cook until edge of eggs starts to turn brown. Flip empty half of eggs over spinach, mushroom & cheese mixture and let cook until insides are slightly damp. Flip over and cook until just moist. Slide onto plate and enjoy!
