Chicken Tortilla Black Bean and Corn Soup

Ingredients
1 large can diced tomatoes, 1 can rotel with green chiles, 1 small can diced green chiles, 3-4 c. of low sodium chicken stock, 2 cups shredded cooked chicken breast, cilantro, garlic, lime, onion, salt, cumin, 2/3 cup frozen corn, 1 cup black beans
Directions
Grill 2 chicken breasts in grill pan seasoned with salt and cumin and sprayed with olive oil. Cook through, set aside to cool. Dice onion and garlic, spray with olive oil, cook for 2 minutes or so, be careful not to burn, add small amount of chicken stock to cover bottom of dutch oven. cook until tender. Add tomatoes, both cans, chiles, rest of chicken stock, black beans and corn. Add cumin to taste, I used about 1 tbsp. Garnish with lime, cilantro and broken tortilla chips (not included in calorie break down). Makes about 3/4 of a dutch oven. Makes 12-1 cup servings.
