Miracle Slimming Soup

Ingredients
1 large onion, chopped2 green peppers (or red), chopped3 carrots, chopped1 bunch celery, chopped1/2 head cabbage, chopped into small pieces10.oz. Portobella mushrooms, thickly sliced1 pkg. dry onion soup mix1-2 beef or chicken bouillon cubes1 (48 oz.) can V-8 juice (can substitute spicy 1/2 & 1/2)2 (28 oz.) cans diced tomatoes 8 cups water1/3 tsp. cayenne pepper (optional)1-1/2 cups brown rice (cooked)
Directions
Saute onions, peppers, carrots, celery, and cabbage in cooking spray. Add mushrooms, soup mix, bouillon cubes, V-8 juice, diced tomatoes, and 8 cups water. Add cayenne pepper if desired. Cover & simmer 2 hours. Add rice near the end. Season to taste with salt & pepper. Makes enough for a week. Makes approx. 14 (1.75 cup) servings.
