Introduction

Delicious! Delicious!
Number of Servings: 34

Ingredients

1/2 cup margarine (1 stick) softened
    1/2 cup peanut butter
    3/4 cup brown sugar
    1 large egg
    1/2 teaspoon vanilla
    1/4 teaspoon salt
    1/2 teaspoon baking soda
    1-1/4 cups rolled oats
    3/4 cup whole wheat flour

Directions

In a large bow combine the softened margarine and peanut butter. Add the sugar and the egg to the bowl. Mix it up really good until it is smooth, fluffy and glossy. Add the vanilla and stir it in a little. Add the salt, baking soda, oatmeal, and flour. Stir it all up really well.

Drop the dough by spoonfuls onto an ungreased cookie sheet. These cookies don't spread very well so flatten the cookies with a fork or the flat bottom of a cup which has been dipped into flour. Bake at 350° for about 12 minutes.

I thought these were great. They were NOT too sweet or peanut buttery, very moist, and quick and easy to make. I added some dark chocolate chips for extra flair, and also just made them into bars rather than taking the time to make individual cookies. Worked great. Yum! - 1/28/10

    Taste fabulous!
Just remember you have to make smaller cookies to what you might be used to eat, I've come out with about 15 cookies (similar size to cookies they sell in subway restaurants)

I used egg substitute, chunky peanut butter, and vegan tub margarine. I also added 1/4 cup dark chocolate chips. They were SO GOOD! They weren't crisp right out of the oven, but the few left the next day were nice and crispy. I will make these again. Maybe with raisins instead of chocolate. - 12/23/10

Because these cookies bake up so thin and flat, I used two with some strawberry jelly sandwiched in between. This makes it the perfect combination of oatmeal and a PBJ. Childhood is calling! - 4/19/12

I have never eaten a peanut butter cookie in all of my 33 years. This was the first and it has set the bar high! I didn't have regular peanut butter on hand as my family likes Peter Pan Honey Nut creamy . This definitely influenced the sweetness factor but nonetheless AWESOME!!!!! - 2/6/12

Very good and very easy. I used PB with sugar in it so I decreased the sugar by 1/4 cup and it worked fine. Nice and chewy out of the oven! I had 4 instead of my planned one serving but now they are safely in the cookie jar so they are now safe from me! thanks for a great recipe! - 11/28/11

So. Amazing. I'm eating one right now, and as soon as I'm done I'm going to go put the rest away so I don't eat them all! I didn't have peanut butter, so I used almond butter. I only got about 12 cookies out of the batter though. - 5/10/11

My husband called them "very complex" and said he liked "the layers of flavors" I made them with Sunsweet Lighter Bake instead of butter or margarine because I am allergic to milk and used 1 1/2 cups oat because I was using a 3/4 c measure and did not pay attention; but they are crispy and chewy. - 2/14/11

Excellent soft chewy peanut butter cookies! Definitely will make again and again, I only got about 20 cookies, so I think I made them a little too big, but still they were perfect and 1 was enough to fix my desire for a sweet. - 2/2/11

Very yummy! Not as strong of a peanut butter taste as I'd hoped for, but I've never made oatmeal peanut butter cookies before and definitely wasn't generous with the amount I put in so that could be why. It also made exactly 34 cookies for me like the recipe says! Yummy. - 3/27/10
