Ingredients

1lbs. ground turkey
1 green bellpepper (chopped)
1 onion (chopped)
1 eggplant (or less... I used about .75 of mine) sliced 1/4inch thickness
1 cup fresh spinach (chopped)
1 jar ragu spagetti sauce
11 oz reduced fat mozzeralla cheese (grated)
3 garlic cloves (minced)
1 cup ricotta cheese
1 egg
1 bunch green onions chopped
Directions
slice eggplant in circles before you start... place heavy pan or cuttingboard on sliced salted eggplant for 1 hour to drain out excessive water... brown ground turkey on medium heat. Add garlic, onion and bellpepper. cook till transparent. Add spagetti sauce and cook till heated through. Add spinach and cook till whilted. In separate dish mix ricota cheese with green onions and egg. heat slices of eggplant on skillet with pam spray for about 4 minutes on each side (i did this to make baking time shorter). spread meat and veggie sauce on bottom layer of cassarol dish, then layer with eggplant, ricotta mixture and sprinkle with mozzerella cheese, repeat layer and cover with foil. Bake at 375 degreese for 35 minutes. uncover for 5-10 minutes to brown top... let sit for 10 minutes and enjoy!

I replaced the turkey with some meat substitute to make it vegitarian and upped the ingredients to organic/all natural type things (no Ragu!). It was easy to make and tasted pretty good. I would cut the eggplant into squares or something next time to make it more like layers and triple the spinach. - 3/28/13

Thank you for including instructions on how to remove excess liquid from eggplant...i knew this needed to be done, but forgot how. I am extremely excited to try this recipe as my family and I have begun a new lifestyle of eating healthier...thank you so much...I will let you all know how it goes! - 9/2/10
