Ingredients

    2 cups Chicken Breast (skinless/boneless, cooked & diced
    1 (10.5 oz) can Cream of Mushroom 98% fat free/40% less sodium
    1 (10.5) can Cream of Chicken 98% fat free/40% less sodium
    1 (8 oz) can Tomato Sauce no salt added
    1/2 cup bell pepper, chopped
    1/2 cup onion, chopped
    2 1/2 tsp chili powder
    1 cup Salsa
    1 cup Marble Jack Cheese or Colby Cheese, shredded
    6 (10 in.) Mission Flour tortillas 96% fat free, cut into 4 x 1 inch strips

Directions

Preheat oven to 350. In a bowl combine the soups, tomato sauce, salsa, bell peppers, onion, and chili powder. In a 13x9x2 in. baking pan sprayed with Pam, layer half of the tortilla strips, chicken, soup mixture and cheese. Repeat layers, Cover Bake for 40 to 50 minutes until bubbly. Let stand for 5 to 10 minutes. Cut into 15 equal pieces. Can be topped with shredded lettuce & low fat sour cream.

    I highly recommend this. I used 3 chicken breasts versus the 2 cups. Easy to prepare and my husband who loves Mexican food liked this a lot. Not sure what I would do to improve. I did use fresh salsa from store. - 3/1/10

    how do you prepare your homemade salsa? And is it going to taste different if I use a store bought kind? What if I used my homemade pico de gallo instead of salsa? - 2/5/10

    You can use any salsa (store bought or homemade). My original recipe called for Picante sauce so I'm sure your homemade pico de gallo would be fine.

    If it is a little runny you can let it set for about 10 minutes uncovered and the juices will be absorbed. You can also use corn tortillas instead of white flour tortillas.

    I'm not sure the cup size per serving. I just cook it in a 9 x 13 x 2 inch pan and cut into 15 equal pieces (3 across and 5 down)
