Ingredients

    2 white onions, halved and sliced into 1/2 rings
    3 cloves garlic, minced
    1/2 cup lentils (red or green)
    2 cups water
    1 (10 ounce) package frozen spinach
    1 5" sweet potato diced to 1/2" cubes
    1 tbsp Indian curry powder
    1 tsp ground cumin
    black pepper to taste

Directions

Makes 4 servings
Put all ingredients in crockpot and stir together. Heat on low for 3-4 hours or high heat for 1-2 hours depending on your crockpot until lentils and poatoes are tender.

    I knew this recipe would not go over with my resident meat eaters so I added just 8 oz of diced turkey kielbasa. It was well received. A great hearty meal in one pot! - 11/13/07

    Making it again tonight - just 3 weeks later. I added the turkey kielbasa as suggested and used broth instead of water. Also doubled the recipe for leftovers. Worth it because it was SOOO good! - 3/31/12

    This was wonderful. I shared it with a friend and she loved it to. Low Cal and packed with nutritional goodies. We decided that the spicyness is determined by the power of the curry used. - 1/29/11

    I am not a big fan of spinach, even though I know I should eat more of it, so I made this, and it was really nice. I didnĀ“t have any sweet potato, so I left that out, and at the end I added some balsamic vinegar, that really made all the difference. - 1/19/09

    This is my go to pantry meal when I have nothing else to make. It works well for leftover lunches too. I add a little berber powder to add some heat (about 1/2 tsp). If I have it, I saute some spicy sausage. It ups the calorie count, but it is wonderful! Serve with some cous cous or brown rice. - 5/9/11

    I ate this for supper last night - pretty tasty, though without the frozen spinach I just added a bag of the prewashed fresh stuff 15 minutes from the end. I added Italian sausage for extra protein and didn't think it was at all bland. - 3/5/08

    I used one can of Veggie Broth and one cup of water. I also used hot sauce instead of pepper. It was great and my 14 yo son loved it with rice. - 1/12/08
