Ingredients

    Three medium sweet potatoes, all-natural maple extract (I found mine at Whole Foods), though vanilla or almond extract would probably work as well, three packets of Truvia, a liberal sprinkling of cinnamon (2-3 tablespoons)

Directions

First, cook sweet potatoes, either by baking (wrapped in tin foil) at 350 for about an hour, or by microwaving (cut off ends, poke holes all over sweet potatoes with a fork, place on a plate covered with a damp paper towel, microwave for 4 min, then turn over, then microwave for another 4 min, etc., until potatoes are slightly soft to the touch).

Cut potatoes into approx 2" pieces, put in a large bowl and mash, either with a fork, a potato masher, or a handheld mixer. Add 1/2 to 1 teaspoon of Maple extract, three packets of Truvia, and a very liberal sprinkling of cinnamon. I measure it out into about 1/2 c. servings (three medium sweet potatoes made me about 5 1/2 c. servings) and refrigerate it in snack-sized ziplock bags to bring to work and microwave for lunch and dinner. Enjoy!!

    Thank you for posting this simple yet tasty treat, it is even great for breakfast!
    I made my potatoes in the microwave, I cook them 2 at a time for 5 mins each side then turn. I will try them in the zippy bags for lunch too.

    This is amazing. DH didn't even realize he's getting stevia and not maple syrup (which he gets for some brunches now and then. He also has a thing about sweet potato skins, so I slipped those after I cooked the potatoes, and put them in the air fryer to make chips.) Thank you- this is so very good! - 4/4/20

    O.K.
    I don't know if I did something wrong. :-( I used 2 Tbsp of cinnamon, and added some almond breeze and a bit of butter... and it is WAY too cinnamony... to the point of wishing I had another potato to cook and mix in (can't taste the maple at all and they are brown, not orange like yours) - 8/16/10
