Ingredients

    2 cups uncooked brown rice
1.5 pounds lean ground beef (can substitute ground turkey)
    1/2 tsp salt
    1/2 tsp pepper
    1 cup chopped onion
    1 cup chopped bell pepper
    1.5 15-oz cans tomato sauce
strips/squares of bell pepper to line dish
    4 slices mozzarella cheese

Directions

Cook rice according to package directions, omitting any salt and/or butter. In skillet, brown ground beef with onion and chopped bell pepper, adding salt and pepper.
When rice is done, add beef mixture and tomato sauce and mix well. Line bottom of 2.5 quart casserole dish with bell pepper strips/squares. Pour rice mixture on top. Lay cheese over the top.
Bake at 350 for 20-30 minutes, long enough for the cheese to bubble and begin to brown.

This was lacking something... spices, maybe. I think if you substitute the tomato sauce w/ a jar of already seasoned Ragu this recipe would be just perfect!! Otherwise, it was really good!! I added a bit of garlic powder. I will DEFINITELY try it again w/ seasoned sauce. The prep wasn't so bad! - 9/18/08

Really good! I added some diced tomatoes and garlic. I like things spicy so I also added cayenne, red pepper flakes and hot pepper sauce - made it perfect for my tastes! - 2/27/10

Ummm...YUM! Great if you like peppers (and I do!) Cut the recipe in half though unless you're feeding an army :) - 11/21/07

I looked at all the different comments and combined a few - used turkey meat, added beans and corn and put less rice and more sauce and spices and it was delicious!! I will definitely be making this again! - 6/28/13

I'm going to try this recipe - to make it vegan, use Daiya Mozzarella Style Shreds and TVP or chopped up vegan burger such as Morningstar Farms Grillers. - 8/4/12

Sounds fantastic and I like the idea of peppers in bottom of the dish rather than trying to stuff half peppers. Thanks and I plan to try it this week! - 8/4/12

I will be making this tonight for dinner using 1 can of black beans and 1 can of corn drained instead of the rice and shredded cheese instead of cheese slices. The leftovers are great wrapped up in a tortilla. Yum! - 8/3/12

This was great. I used ground turkey instead of the beef. I also added a little cumin and garlic when cooking the meat/onions/peppers. Subbed the mozzerella cheese for pepper jack cheese. - 1/30/10

this was delicious. I used brown rice, ground turkey, and shredded mozz. cheese. Makes WAY more than 8 servings and needs a bigger pan than a 2.5 quart. - 1/17/08

My husband and I both loved this dish, he even helped me make it, it is that easy. It does make up a big batch especially with only 2 eating so I froze the left overs in single serving bowls. Made a wonderful lunch for me on several occasions! - 12/13/07

Great recipe! I love stuffed peppers, but husband isn't crazy about them at all. He actually likes this!!! Said I can have it any time I want. I halved the recipe as saw it was for 8 and only 2 of us....more than enough. Could have leftovers for lunch!! Thanks for a great recipe. - 10/28/07

This was good. Probably won't make it again only because the hubby wasn't blown away. It made a much bigger quantity than I was expecting so I froze some portions for easy lunches later! - 10/8/07
