Ingredients

    1 cup whole-wheat flour
    1 cup whey protein powder (chocolate or vanilla)
    1/2 cup cocoa
    1-1/2 teaspoons baking soda
    1/4 teaspoon salt
    1 cup Splenda
    3/4 cup light mayonnaise
    1 cup water
    1 teaspoon vanilla

Directions

1. Sift the flour, cocoa, soda and salt together. (I suggest not using a regular sifter, as the cocoa does not come out well. Use a strainer instead.)
2. Cream the sugar, mayonnaise, water and vanilla together.
3. Add dry ingredients to the creamed mixture and stir.
4. Pour batter into greased and floured 9 x 13 inch pan.
5. Bake at 350°F for about 25-30 minutes.

Serves 12.

If you make cupcakes, the batter will make 18-24 depending on size of tins.

Keep cake covered tightly to retain its moistness. We eat it plain, but you can sprinkle powdered sugar on it to make it fancier. Use a paper doily and sprinkle the powdered sugar through a sifter. Lift doily and you have a beautifully decorated cake!

    Sometimes when a recipe calls for mayo or sour cream I substitute greek yogurt for it and that seems to work for me. Everyone's taste buds are different!! - 5/21/13

    Stutlertoni..yes applesauce can be..might not be a rich chocolate flavor but yes it is a great sub for mayo...Greek yogurt is also it will give it almost the same kinda taste as mayo. I have used all these and they are interchangeable - 7/2/13

    I sprinkle Brown Sugar TWIN (from the box) on top of baked goods, gives the right touch of sweetness. Don't use the mixture of brown sugar/splenda brown sugar, that has a nasty off taste. Sugar Twin is better. - 5/21/13

    These were surprisingly great! Taste just like a regular cupcake, my daughter told me. I used chocolate protein powder and substituted fat-free vanilla greek yogurt for the mayo. I had to add a little extra water. I'd give them 5 stars, but for some reason it wouldn't let me do the stars! - 1/18/15

    I think this recipe came out really good. The few changes I did (after reading a few reviews) were substituting the mayo with greek yogurt and I used a muffin tin and cooked them for about 20 minutes. I also added Chocolate chip morsales to a few of them for the kids. They were great both ways. - 8/15/13

    I wanted to try this, but felt it had too many carbs for my low carb eating plan. I used almond meal flour for the wheat flour. I also cut the Splenda back to around 3/4 of a cup. The result is in and it's a keeper! - 7/12/14

    Whey protein powder can be found at any health store (GNC) and some grocery stores carry it in the food isle. Just compare brands, they are very different from one another(as is the taste). Some locations let you taste before you buy.
