Introduction

Ingredients

    Two small potatoes, chopped; one bell pepper, chopped; half a cup of fresh mushroom pieces; a quarter cup of onions, chopped; 1 1/2 tsp of garlic, minced; three large eggs; 1/4 cup skim milk; 4 slices bacon; 1/4 cup sharp cheddar cheese

Directions

This works best with a cast iron pan. fry bacon, when bacon is done cooking do not drain the grease. Add potatoes, peppers, onions and mushrooms. Stir every few minutes until potatoes are done. Mix up eggs and milk in a bowl and pour over the veggies. Stir until eggs are cooked. Sprinkle cheddar and let it melt. Makes two servings. Goes well with ketchup or salsa.
