Introduction

Easy and simple to prepare. Plus it is lowfat. The original recipe was found on Crock Pot Recipes. Since I cook for 1, I substituted 1 whole chicken for 3 skinless thighs and added red bell pepper. Ingredients

    1 small sweet onion, sliced
    8 cloves crushed garlic
    1 cup diced red bell pepper
    3/4 cup lite soy sauce
    1/2 cup vinegar
    3 skinless chicken thighs

Directions

In a small bowl combine the onion, red bell pepper, garlic, soy sauce and vinegar and mix all together.

Place chicken in crockpot and pour mixture over chicken. Cook on low for 6 to 8 hours.

Optional: Serve over Jasmine Rice.

    This is an extremely easy and tasty recipe. I've got 7 (including 5 teenagers) to feed so I double the recipe and cook it in a 6qt crockpot. - 3/29/12

    Combined this recipe and the one by WILLWORKFORFOOD.
    Used apple cider vinegar and to save time .5 cup frozen chopped onions
    There's flexibility to add more chicken if you have a bigger family. I poured some of the left over sauce on my rice, but use sparingly or the rice may get salty
