Ingredients

    1 large egg white
    2 Tbsp. nonfat milk
    1 tsp. lemon pepper herb blend
    1/2 cup dry bread crumbs
    1/4 tsp. paprika
    four 4-oz. boneless, skinless chicken breasts

Directions

*Preheat oven to 400 F. Mist a shallow baking pan with nonstick cooking spray.

*In a small bowl, beat egg white with a whisk until frothy: whisk in milk. In another bowl, combine herb blend, bread crumbs and paprika, mixing well.

*Dip Chicken in egg-white mixture and then coat with seasoned bread crumbs; transfer to prepared pan. Bake for 30 minutes, or until chicken is golden brown and juices run clear when thickest part of meat is pierced with a fork.

    I do mine slightly differently. Instead of using milk, I mix the egg with dijon mustard. Gives it a tiny spicy kick and really locks in the moisture. - 7/14/09

    I made this and it was pretty good. It needs something extra however to give the breading more pizazz. The lemon pepper needs some help. I will be making it again. - 5/28/08
