Number of Servings: 8

Ingredients

    1 package of 99% lean ground turkey
    2 cups of brown rice
    1 can of back beans (rinsed)
    1 can of petite cut tomatoes
    1 cup of shredded Mexican style cheese
    1 packet of taco seasoning mix
    1-1/2 cups of enchilada sauce
    3 tbsp light sour cream
    1 cup of water

Directions

Brown ground turkey in large skillet, add taco seasoning and cook as directed.
Add rinsed black beans, tomatoes, brown rice and 1 cup of the enchilada sauce. Combine and heat.
If mixture becomes too think, add water as needed to thin it out a bit.
Next add the sour cream and stir until combined.
Add cheese and heat until cheese is melted and combined.
Put 3 tbsp of the meat mixture into the center of a whole wheat tortilla, wrap and place in a 9x12 baking dish. Repeat with remaining mixture and tortillas.
Spread remaining enchilada sauce and cheese over the top and bake at 350 degrees for 20 minutes.

    For those questioning the nutritional values, if you use the 'Ingredients Detail' link at the bottom on the nutrion panel, it will show exactly what was included in the calculations. Just a tip on that. - 6/25/09

    There's no size and no. on the tortillas, so was that calculated into the nutritional info at all? I would also like to know what size is a serving and maybe even what size cans of beans and tomatoes were supposed to be used. I may need to input my own ingredients to find out N.I. for myself. - 12/9/07

    I have mine in the oven right now and I too, am confused about the number servings, tortilla size and cheese. I used 1/2C fat free cheddar in the mixture and 1/2C on the top. I have 1/2 frying pan left to freeze. I keep tatsing what's left in the pan and it it delicious!! Forget the tortillas! - 2/7/09

    Confusing directions and nutrition info (see tortilla comments above) - why did it say to add the cheese at one point then later said "add the rest of the cheese"? Needs to mention the need to split it. - 1/24/08

    I added onions, carrots, celery, and red sweet pepper to it and was great! I had no problems with dryness. Mine made a lot and we are freezing the extra filling for a later time - looking forward it. - 12/10/07
