High fiber, healthy breakfast muffin. High fiber, healthy breakfast muffin.Number of Servings: 24
Ingredients

1 C.flaxseed ground
1 C whole wheat flour
1 C. Oat Bran
1 C. Brown sugar
2 tsp. Baking soda
1 tsp Baking Powder
1/2 tsp salt
2 tbsp. Cinnamon
1 1/2 C. shredded Carrots
2-3 Apples, cored and chopped up or shredded
1/2 C. Chopped nuts (optional)
1/2 c. Raisins (optional)
3/4 C. 2 % milk
2 Eggs, beaten
1 tsp. Vanilla
Directions
Mix flour, flaxseed, bran, sugar and dry ingredients together. Shred carrots and apples and add these along with optional raisins and nuts to dry ingredients. Mix well. Stir together milk eggs and vanilla and stir this into batter until well moistened. Fill cupcake papers until 3.4 full and bake at 350* for 20 to 25 minutes.
Makes 24 med muffins.
( freeze them in ziplock bag, then just pull one out each morning and will be ready to eat 20 minutes later on the way to work! )

DELICIOUS.. I used 1/2 the brown sugar (I cut all my recipes in half now).. and instead of raisins and nuts added 2 dates to each.. soo good..and the dates are full of fibre toooo!!!!
question tho.. I have bran and oats (oatmeal)..but have never bought oat bran before? where do I find this? ..

I was surprised at how moist these muffins are. I only put in 1/2 of the brown sugar, but next time I will increase it, as I do find they are lacking in sweetness. I subbed 1/2 cup of the carrots for pineapple, but I really can't notice the taste of the fruit. so, I would leave that out next time. - 7/17/09

Mine were dense, no problem there. I did get 24 so they will freeze and last a while. I will not put 2 TABLESPOONS of cinnamon in. I had second thoughts about that and should have followed my instincts on that. I cannot beleive no one else found them way too much tasting of nothing but Cinnamon. - 5/16/10

These are moist and tasty. I used the 1c sugar (1/2 Splenda brown sugar & 1/2 Splenda) as I have a sweet tooth. Used rolled oats for the bran but otherwise stayed with the recipe. I ate 2 for breakfast today with 1 T PB for added protein with my hot tea. Yum! They'll make a great sweet snack, too. - 1/25/10
