Introduction

A delicious mix of crunchy green tomatoes and cucumbers--cumatoes! A delicious mix of crunchy green tomatoes and cucumbers--cumatoes!
Number of Servings: 1

Ingredients

    1/2 cup small firm green tomato (cut as desired)
    1/2 cup sliced cucumber
    2-1/2 tbsp fat free Italian salad dressing
    1-1/2 tbsp no-sodium seasoning blend

Directions

Mix all ingredients together in a small container.
Place a lid on the container and shake well to make sure the tomatoes and cucumbers are coated with seasoning and dressing.
Open lid and enjoy. Yields 1 cup.
This recipe is really quick. It is really good if you let the ingredients marinate overnight. It is a nice salad that is easy to increase to share with others or to make as a side side dish.
Cool and crisp taste is great to complement bbq dishes!

    A great way to use the last of our tomato harvest. Add some diced chicken breast, a few kalamata olives, a little feta cheese and fold it up in a pita...a quick, greek-inspired main dish...yummy - 9/26/09

    My mother used to make this when I was a child. She would add sliced onion and let it sit in the refridgerator over night so the flavors would blend. She also used regular red tomatoes and it was delicious! She'd also serve it with some fat free sour cream - yummy! - 9/26/09

    I eat a salad of cucumber and tomato's almost daily during the week. Sometimes I add in some onions, sometimes raw onions, or I'll add chicken to it to change it up. Also use the Balsic Flavored Ving. Dressings to add variety. - 12/8/09

    I do something simular with cukes, tomatoes, vinegar, salt, pepper, and onion. The seasonings are to taste according to what you have for veggies. Real good - 11/24/09

    I make a similar one using chunks of onions, reduced fat feta cheese and fresh basil leaves tossed in evoo and balsmic vinegar. The longer it marinates the better it tastes. - 9/28/09
