Ingredients

    1 small zucchini, sliced (about 1 cup)
    1 large onion, cut in half, then sliced
    1 cup canned tomatoes or tomato sauce
    1 15oz. can corn, drained (about 1-1/2 cups
    Montreal steak seasoning to taste (1/8 tsp)
    fresh garlic or granulate garlic to taste
    2 tsp olive oil

Directions

Sprinkle with garlic & seasoning mix and saute zucchini & onion in olive oil until slightly softened & browned. Add corn & tomatoes & heat until the whole dish is warmed. Serves 3.

    Did your Grandma Maria know my Grandma Nelle? She used to make this same dish! : ) It is delicious. My G-ma used to also melt some cheese over the whole thing, Mmmm.... Guess I'll only do that if I've got a calorie deficit for the day though. - 12/19/07
