Ingredients

    2 cups unbleached all purpose flour
    2 1/2 cups whole wheat flour
    1 1/2 tsp. salt
    1 1/2 tsp. baking soda
    1 1/2 tsp. baking powder
    2 Tbsp. cinnamon

    2 1/2 Tbsp. ground flax mixed with 1/2 cup plus 1 Tbsp water
    2 large bananas, mashed
    1.5 cups sugar
    1 Tbsp. plus 1 1/2 tsp. vanilla extract

    3.5 cups shredded zucchini
    1 1/4 cups raisins

Directions

Preheat oven to 350 degrees Fahrenheit and spray three 8x4 loaf pans with non-stick spray. Mix the first six ingredients in a medium sized mixing bowl.

Mix the flax mixture, bananas, sugar, and vanilla extract in a large bowl. Add the zucchini and raisins and stir until incorporated.

In two batches, mix the dry ingredients into the wet. Transfer batter to loaf pans and bake for about 50 minutes. Watch carefully and check with a knife or toothpick in the center.

    This is wonderful! Didn't have any flax so used two eggs instead but a part from that, I stuck to the recipe. Got 3lbs of bread - 8/15/13

    I don't usually eat vegan, but this recipe was awesome! I used Splenda instead of sugar. My boys had NO idea they were eating something "nutritious". I will definitely make this again. - 10/21/09

    Don't drain the zucchini after grating it or the batter gets too thick. I added an extra banana and left out 1/2 cup of sugar. It turned out delicious and nutritious! No one even GUESSED it was vegan! - 7/10/09

    Very Good
    This was good, my daughter and I made it together and was easy to do. She loved it too so thats a good sign this is a keeper. - 8/12/07
