Ingredients

3 oz. turkey breast
3 cups chicken broth or bouillon
1 cup spinach
1 cup red pepper, sliced
1/3 cup onions
3 cloves garlic
6 oz white wine
1 tbsp rice vinegar
1 tbsp cilantro
1/2 Haas avocado, without skin and seeds
1/4 cup jalapeno pepper, sliced
Directions
Roast turkey breast, chop in small pieces, then saute with garlic and onions to bring out flavor.
Heat up broth in large soup pot.
Add veggies (except avocado) to saute pan and saute in olive oil with turkey.
Add white wine and rice vinegar.
Transfer all veggies and turkey to broth. Simmer for 15 minutes. Slice avocado and place on top of bowls.
Serve and enjoy!

As well as me watching my weight, my husband just had open heart surgery so we are careful about everything we eat in the sodium content column, so I would never make this although it sounds great. Any of the pre prepared broths or soups have an exorbidant amout of sodium. Homemade is the way to go - 3/5/10
