Introduction

Spicy and delicious! Spicy and delicious!
Number of Servings: 2

Ingredients

    3 oz. turkey breast
    3 cups chicken broth or bouillon
    1 cup spinach
    1 cup red pepper, sliced
    1/3 cup onions
    3 cloves garlic
    6 oz white wine
    1 tbsp rice vinegar
    1 tbsp cilantro
    1/2 Haas avocado, without skin and seeds
    1/4 cup jalapeno pepper, sliced

Directions

Roast turkey breast, chop in small pieces, then saute with garlic and onions to bring out flavor.
Heat up broth in large soup pot.
Add veggies (except avocado) to saute pan and saute in olive oil with turkey.
Add white wine and rice vinegar.
Transfer all veggies and turkey to broth. Simmer for 15 minutes. Slice avocado and place on top of bowls.
Serve and enjoy!

    If you criticizers look carefully the recipe notes 3 cups bullion - if you take 3 cups of DRY bullion this will give you that crazy sodium count. Everyone is so quick to criticize instead of actually giving something a try. - 3/20/09

    You could use chicken instead of turkey and make your own broth, that would help with the sodium content. If you buy low sodium broth, you could also make it with a rotisserie chicken. Much faster! - 3/5/09

    I used chicken cut up instead of turkey and increased the spinach. I also added some mushrooms. This was very good. My husband, daughter, and I loved it! - 3/9/09

    If you make your own chicken or turkey broth,you can make a day or two ahead and refrigerate. When you get ready to use the broth, the fat will be congealed at the top and is easy to take off and discard. - 3/5/09

    It's amazing how fast it is to make this soup and yet how delicious it is! A definite, year-long family favorite for us. The only adjustment I make is to use my home made turkey (or chicken) broth to cut out those thousands of mg of deadly Sodium. - 3/5/09

    I am looking forward to trying it, with homemade broth. JJDOCKRICH, as the originator of the recipe you can edit it to fix the sodium count. Instead of bouillon, use one of the low-sodium broths in the SP database. Thanks! - 11/1/11

    you can use white cooking wine(usually found on the aisle with the vinegars) which has the flavor without the alcohol. also I think the sodium has to be a misprint. - 3/5/09

    I never try a recipe with this high amount of sodium or any recipe that has over 200 cal per serving. I don't feel it leaves me enough calories for the rest of the meal. Since I didn't try it, I won't be able to rate it. - 3/5/10

    As well as me watching my weight, my husband just had open heart surgery so we are careful about everything we eat in the sodium content column, so I would never make this although it sounds great. Any of the pre prepared broths or soups have an exorbidant amout of sodium. Homemade is the way to go - 3/5/10

    If I'm going to consume almost 3000 mg sodiums in one serving, I will heat a can of soup!

    This recipe sounds very good and I will also try it.Iwould probely make the broth from scrach,and not use the wine, Both turkey or chicken sounds good, but will I be adding extra Fat by making my own broth? I'm supposed to be watching my sodium. This seems very high. - 3/5/09

    I will definitely try this but will use low sdium broth not bouillion as the sodium count in the nutrition info is way to high for those of us that must be careful of that. Otherwise it sounds delish!! - 7/8/08
