This yummy chicken is super simple to make and low in calories. I learned how to make it from a family member and it's one of my favorite dinners and I hope you enjoy it too! Ingredients

    1/2 Tablespoon Olive Oil
    1/4 Cup Cream Cheese
    1/3 Cup Chicken Broth
    2 Tablespoons Pesto
    2 Small Chicken Breasts ( approx. 3 ounces each )


Directions

Heat the olive oil in a skillet on low - medium heat. Add the chicken to cook on the first side until lightly brown, then flip the chicken.

Once you have flipped the chicken to cook on the other side add the cream cheese to a second skillet on low heat until it's soft, stirring constantly.

When the cream cheese has melted or is relatively soft mix in both the broth and pesto. Cook and constantly stir until sauce is thickened and well blended.

When both pieces of chicken are completely cooked and browned on each side, place the chicken on plates then pour the sauce right on top!

Serves two people!

    Very Good
    This was very good! My 15 month old and 5 year old both ate it up! I used Fat Free cream cheese and I made more than 2 servings, so, I tripled the recipe. Turned out great! I'll definitely make it again! - 8/3/10

    Great recipe! I baked my chicken instead, and found the sauce wouldn't thicken on it's own, so I added a bit of flour to get it to the consistency I wanted. Other than that, I was really happy with the recipe, and even my picky husband liked it! - 8/2/10

    Incredible!
    This sounds like a recipe I had in restaraunt, but only waaaay healthier! It was soooo easy and soooo good. I made 2oz bowtie pasta to go with it, adding only 200 cals per/serv. Just mixed the pasta with the sauce and cut up chicken. Def will make again!!! - 8/2/10
