Number of Servings: 4

Ingredients

    I bag of spinach
    1 box of cherry tomatoes
    1 white onion, diced
    1 carton of egg whites
    1 serving size of shredded cheddar cheese

Directions

Preheat oven to 400
Place cherry tomatoes on baking sheet with olive oil and salt
Roast cherry tomatoes for 15 minutes or until they burst

While tomatoes are roasting dice up and saute onion and spinach in a pan

Combine all ingredients and egg whites in a glass baking dish and top with shredded cheddar

Bake at 350 for 10 minutes

    This was very good! Delicious, filling, low cal, and at least a serving of veggies...doesn't get much better than that!
    I wasn't sure how much egg white to use, so I used 8 oz, and found it took about 30 mins to cook as opposed to 10.

    I made this last night and re-heated a piece this morning for breakfast this morning and it was so good! I added about 6 oz of sausage and made 8 servings instead of 4. So delicious! - 9/22/10

    Good
    Even though it turned out good, it was hard to guess how much of each ingredient to add. I like the idea of adding breakfast sausage to it. Also it definitely does not cook in 10 mins. I had to up the heat to 450 degrees and even then it took 45 minutes - 2/10/19
