Ingredients

    Raspberries, .5 cup
    *Grey Poupon Dijon Mustard, 1 tsp
    *Lemon Juice, 1 lemon yields
    Pistachio Nuts,1 Tbsp
    Bread crumbs, dry, grated, plain, .25 cup
    Parsley, 1 tbsp
    Pepper, black, 1 dash
    Salt, 1 dash
    Chicken Breast, no skin, 1 breast, bone and skin removed (halved)
    Olive Oil, 1 1tsp

Directions

In a food processor or blender, process berries, mustard and lemon juice until smooth.
Transfer to a shallow pan
In another pan, combine bread crumbs, pistachios, parsley, pepper and salt, Dip chicken into the raspberry sauce, then into the pistachio mixture to coat. Heat olive oil in a skillet and saute chicken over medium heat, about 5 minutes oer side.
NOTE: I did this without the bread crumbs and instead added 1/4 cup almonds to the food processor with the pistachios. It was great but would add some calories and fat.

    Hey if I use gluten free bread crumbs it would be another gf food to add to my arsonel thanks. It is hard to find good things for my diet . - 9/10/10
