Introduction

Number of Servings: 6

Ingredients

    1 cup sweet onion, chopped
    1 red bell pepper, chopped
    1 cup mushrooms, sliced and chopped
    3 cloves garlic, minced or chopped
    2 tbsp olive oil
    1 10 oz package frozen spinach(the chopped kind)
    1 can tomato paste (6oz)
    6 tbsp of A1 Steak Sauce (yes, it is vegan!)
    1 tbsp dried parsley(or fresh if you like)
    a bit of fresh ground pepper if you like
    1 package Morning Star Farms Grillers Recipe Crumbles meal starter (1 package yeilds 6 2/3 cup servings)WARNING!!!! These are no longer vegan!!! as a comment down below states. I have not tried the boca ones that are mentioned.

    Bob's Red Mill has a TVP that is vegan though. I am adjusting the ingredients to reflect this change. I appologize for the Morning Star Farms switch. how ridiculous that they've changed their recipe...


    please feel free to add/change spices as needed. sometimes we put mustard in, or horseradish, etc...

Directions

FIRST: take out spinach and set on counter to thaw (or run tap water over the package for a bit) while preparing the rest of the veggies.

SECOND: rehydrate the TVP per package instructions.

Heat olive oil over medium heat and sautee the onions first, until soft.
Add peppers, sautee until tender.
Add the mushrooms and garlic.
Sautee for an additional 3-5 minutes until tender and blended well.
Add slightly thawed spinach and cover for 3 minutes.
Add can of tomato paste, stirring and mixing it in to the veggies. Cover for 2 minutes.
Add A1 sauce and dried parsley
Add rehydrated TVP and stir well. Cover for additional 10-15 minutes, stirring occasionally.

serve with buns of your choice!

Yields: approximately 6-8 servings. For more servings, double or triple everything in the recipe.

    NB. Morningstar Crumbles are *no longer* vegan, as they changed the recipe (the wrong way if you ask me). Boca Crumbles are still vegan I believe.

    Worth checking regularly as these recipes seem to change without warning.

    Thank you! I just discovered this. I have altered my recipe and now make it with Bob's Red Mill TVP. Again, thanks for pointing this out, as I did not realize they had changed their recipe. Darn them!!!

    My husband and I did not care for these sloppy joes. I think they would be better if you omit the A-1 and add ketchup/barbecue sauce. Just a thought. - 8/27/07

    i'm sure it's tastey with bbq or ketchup...we just don't like them so much. A-1 is our family's favourite. Please experiment and have fun! Thanks for trying the recipe!

    I'm eating it right now and it's delicious. I'm not a vegan but this just looked so good, I had to try it. I'm thrilled that it's as good as everyone said it was! I did end up adding about 1 c. of pasta sauce to it though to fix the consistancy. - 8/1/07

    great recipe!!, I used a 6 oz package of baby portobello mushrooms which was closer to 2 cups chopped but it worked great. I added a little cumin and cayenne for spice, and ran out of A-1 so I added worshteshire sauce instead, also a good match. - 7/8/07

    even my spinach-hating but vegetarian son loved this!
    i took out the mushrooms and onions for him, used Red Sauce instead of steak sauce and made my own tomato paste, but it was delicious! and the leftovers made a nice base for chili-- just added beans!

    Very easy to make. MUCH better than the vegetarian sloppy joes you get at the store.
    I made it exactly to the recipe but it wasn't saucy enough for me, so I'll have to add to it, but still great.

    I had to change my rating from 2 stars to 4. I didn't like the recipe on the day that I made it because the spinach flavor was overpowering. BUT the second day, after the flavors mellowed and melded, it was outstanding! I now consider this confort food and will return to this recipe again & again. - 8/21/12

    Actually we did not like this recipe at all. But, rather than letting the left overs go to waste: we added a can of progresso tomato soup and some hot italian sausage. Served with elbow noodles and it made Delicious Goulosh!! So, thank you for the inspiration!! - 3/26/09

    The texture was perfect, and I love how many veggies are in this, particularly the mushrooms. However, our entire family felt this was a bit bland. I will definitely try it again with some variation. Thanks! - 10/5/08

    Made this today and it was yummy - very hearty. A couple of changes we made 1) We used a local bbq sauce in lieu of the A-1 and 2) We used 2 cups of mushrooms. It's great on a whole wheat bun and great on its own. - 4/5/08

    This is a great recipe. It had a little too much of the A1 taste in it. To me, sloppy joes are a little sweet. To counteract the taste of the A1 (because that's what I could ultimately taste the most), I used a littl ketchup. Perfect. - 12/6/10

    I love this! I am just transitioning to vegan eating and this was a blessing, thought I would never enjoy fun traditional meals like sloppy joes but htis was wonderful.
