Introduction

Makes 5 GIANT Oatmeal Raisin Cookies Great for breakfast or a snack. Chewy and Tasty:) Very low-fat and low-calorie! Makes 5 GIANT Oatmeal Raisin Cookies Great for breakfast or a snack. Chewy and Tasty:) Very low-fat and low-calorie!
Number of Servings: 5

Ingredients

    1 cup oatmeal
    1/3 cup whole wheat flour
    1/2 tsp baking soda
    2 tsp cinnamon
    1/3 cup unsweetened applesauce
    1/4 cup sugar
    1 egg white
    1/2 tsp vanilla
    1/4 cup raisins

Directions

Combine the Oatmeal, Whole Wheat Flour, Baking Soda, and Cinnamon. Whisk together Applesauce, Sugar, Egg, and Vanilla. Slowly add the dry ingredients into the wet. Stir in raisins.

Separate into 5 mounds on cookie sheet. Shape into cookies, about 1/4" thickness.

Bake at 365 degrees for 10 minutes. Let cool, then flip cookies upside down and bake for another 2 minutes.

(other fruits and nuts can be substituted for raisins.)
(chill dough for 15-30 minutes for less gooey dough)

    I thought maybe the blandness others mentioned was due to the lack of salt. I used a whole Eggland's Best egg, 1/4 brown sugar instead of white (for more richness), added a couple Tbsp of flour and a 1/2 tsp of salt, and they turned out great. So easy! - 7/19/09

    These are an awsome way to eat breakfast! I added an extra teaspoon of cinnamon, nutmeg, and used raisins and cranberries. The extra spices really picked up the flavor...These are going to be a new staple for my breakfast as they are so easy to make and conveniant to take! Thank you! - 11/3/09

    Though not the best oatmeal cookie I have ever eaten, it was pretty awesome considering it fits well with my eating plan! I followed other reviews and added pumpkin spice and extra cinnamon as well as brown sugar instead of white. Thanks for a great recipe! - 8/5/10

    These are great for that quick breakfast alternative. Substitued 1/2 of the sugar for stevia and used organic steel cut oats for the oatmeal, a little chewy but nothing you can't handle. Also substitued dried cranberry's for 1/2 rasins. Well def make again, thank you! - 10/7/10

    I made these with Splenda, a tsp of pumpkin pie spice, a little extra applesauce and 1/4 tsp salt. Without raisins/nuts/sugar they're 100 cal each, and incredibly delicious. Next time how can I make them "lighter" or fluffier though? Butter? More baking soda? - 7/17/10

    I just baked these and I really like them. I was nervous about them because they looked a little strange before cooking, but they're great! I can see what people mean about them being a little bland, but I'm not sure what could be changed, I'll comment again if I find something.

    Yes 365 degrees is correct. And of course you can make them smaller, i would just lower the baking time and temperature. Just play around with the recipe & enjoy!

    These turned out pretty well... I added a bit of nutmeg per other suggestions and also used 1/2 sugar and 1/2 Splenda and a mix of dried cranberries and raisins. Overall, they were pretty good - still a bit plain, but it might just be me still getting used to the taste of whole wheat flour - 6/23/10

    I made two batches, one original and one modified. Everyone liked the original but thought it was a little bland. For the second batch, I used a pinch of salt and pinch of brown sugar and dark chocolate chips instead of raisins. Everyone loved it. The cookies are so big that DD and I split one. - 3/17/10

    I made these over the weekend. Not too bad. Definitely had flavor because I added a little more cinnamon. A little chewey but a keeper. Family could not really get past the dark color of them. Maybe because of the wheat flour? Maybe the extra cinnamon? I will definitely make them again. - 2/8/10

    Didn't look anything like the picture, barely resembled a cookie. Had to flatten them with a spoon before turning over for last 2 mins of baking. Flavour was just ok and texture was slightly dough-like. I am not a novice to baking, but won't make these again...so disappointed :( - 10/25/14

    After reading the other comments, I substituted palm coconut sugar for the white sugar to give it more of a molasses flavor. I also added 1/2 tsp nutmeg, 1/2 tsp ginger and 1/2 tsp allspice and instead of applesauce, I used 1 small banana. I baked them for 8 minutes before flipping. Turned out great - 10/22/12

    Easy to make. Very nice portion. Based on other reviews I used brown sugar instead- adds about 10 calories more each cookie. Also doubled cinnamon. These were pretty good. Next time I will not put back in the oven after the initial 10 minutes, cut cinnamon to 3T, and maybe add more raisins. - 6/29/12
