Ingredients

    Ingredients:
    - 3 bananas
    - 1/2 cup unsweetened applesauce
    - 1/2 cup sugar-free pancake syrup
    - 1/4 cup Splenda™ brown sugar blend
    - 1 1/2 cups flour
    - 1 teaspoon baking soda
    - 1 teaspoon salt

    Options: (not counted in nutritional value)
    - 1/2 teaspoon ground cinnamon
    - 1/2 cup walnuts
    - 1/2 cup chocolate chips

Directions

*~* Preheat oven to 350 degrees
*~* Mash bananas. Add applesauce, syrup, sugar. Mix well.
*~* In another bowl, mix flour, baking soda, salt, and cinnamon (if you are using it).
*~* Add dry ingredients to wet and mix well. Add nuts or chips, if you are using them.
*~* Pour into a regular size loaf pan or four mini-loaf pans sprayed with non-stick spray. Bake 50 minutes, or until a toothpick comes out clean.
*~* Let bread cool in the pan for 10 minutes, then on a wire cooling rack for at least 30 minutes...if you can keep your hands off of it that long!

(Servings: 20 - Full loaf sliced in half longways, then 10 slices. Four mini-loaves make five slices each.)

    I made this recipe but then I made another batch same day and put the mixture in my muffin tins. I have to say the muffins were more delicious than the loaf. My husband and I are both diabetic and he couldn't believe he could have these. - 11/24/16

    As a Diabetic Vegan, I did a search for vegan diabetic recipes and this one came up. Dabetics should not be eating anything with flour, white, unbleached, whole wheat or similar. I would like more recipes that include Rice or Quinoa flour. thank you - 12/20/14
