Introduction

orzo and veggies orzo and veggies

Ingredients

    3 cups orzo pasta
    1 cup zucchini, sliced
    1 medium tomato
    2 large celery stalks
    1 cup carrots, strips or slices
    1/2 cup frozen peas
    5 mushrooms, medium
    12 tbsp light mayonnaise
    6 tbsp fat free Italian salad dressing

Directions

Cook orzo according to package directions.
Chop or dice all vegetables.
Add in Italian dressing to taste and mayo* to taste.

* depending on how much you add or omit it will affect the caloire count

    I think I would also substitute low fat plain yogurt to mayo, and make my own dressing with olive oil and vinegar. That will add some fat but good fat... :-)

    Very Good
    I used greek yogurt for the mayo and added olives, eggplant, and artichokes. I've added athenos reduced fat feta before and it's yummy too. Also, once I broiled some whitting and then threw that in as well. Very yummy! Definitely a good starting point for recipes. - 9/26/08

    I subbed quinoa instead of orzo for a gluten free route...added red onion, minced garlic, and grated parmesan...yum. The feta would be good too. - 9/26/08

    Great recipe. My kids don't generally go for regular pasta salad, but they love orzo salad. I make mine kind of greek salad style, with cucumber, red onion, halved cherry tomatoes and feta cheese. - 9/26/08

    This is a great recipe. Easy to make and an substitute the ingredients to make different combinations such as adding chicken to it. Substituting the italian dressing to other great low cal dressings. - 9/26/08

    This is a divine quickie meal when company drops in unexpectedly. We add a can of tuna to it. Can be served warm if you leave out the mayo. Cold left overs are good too. - 9/26/08

    This was a wonderful salad. I didn't realize until I was getting ready to put the dressing on that I was out of Italian , so I substituted dry ranch dressing mix and my family loved it. I will definately make it again! - 6/5/08
