Ingredients

    Eggland's Best Large Egg (or any other brand), 1 serving
    Egg white, 5 serving
    Spinach, Organic Baby, 2 cups
    Cheese, Mild Queso Quesadilla JalapeƱo (OR substitute with Part Skim Mozzarella Cheese), 1 oz
    Onions, raw, 4 slice, medium (1/8" thick)


Directions

Heat up skillet or pan. Prepare 5 egg whites & mix in 1 egg. Stir. Pour into pan. Mean while, measure out spinach, onions & cheese. Flip egg mixture (looks like a tortilla) add Spinach, Onions & Cheese & fold in half.

Makes 1 DELICIOUS Omelette

    This was wonderful! I had it this morning for breakfast! I only had frozen spinach, and used a little low sodium chicken broth to sautee veggies before making the omelet and it turned out great! - 2/22/11
