Introduction

A rice pudding using cooked rice. A rice pudding using cooked rice.
Number of Servings: 4

Ingredients

    3 cups brown rice - cooked
    1 cup (not packed) raisins
    1 tsp cinnamon
    1-1/2 cups skim milk - or to taste

Directions

Put the rice in a small saucepan with all the other ingredients.
Bring to the boil and simmer for about 3 minutes.
1 serving = 1 cup

    mmmmmmm...pudding for breakfast! (Just like Bill Cosby's "chocolate cake for breakfast" - yummy & good for you!) I too added an egg and some craisins, as well as 1 T of oat bran & some Pampered Chef Cinnamon Plus. YUM! I felt full well into the afternoon. WIll definitely make this one again!! - 10/13/08

    This was a very quick and simple recipe. I'm not a big fan of brown rice and it wasn't sweet enough for me(but I'm a sugaraholic). If I liked brown rice, I think I would have rated this as excellent. - 10/2/12

    We've made this for years w/o the raisins and adding a pad of butter. I made according to the directions here and liked it just as much. My husband added sugar to his portion. - 11/7/09

    what about no milk no raisins and scramble eggs in the rice
    coat the pan with pam.. just too much milk for me.
    No cinnamon or nutmeg or ginger no spices at all
    that might help.

    This sounds really good. If you chop the raisins, as Janeybee suggested, you can use less of them, cutting down some of the carbs. I think Craisins, or dried apricots would be a good substitute also. - 10/12/08

    I'm gonna try this recipe. I have one that I love but it uses white rice and cinnamon sugar and less raisins. This one is healthier and about 100 less calories- so I'll have to check it out. - 10/12/08

    I'm going to try this next time I have left over rice. Might beat and egg in with the milk for a more custardy dish with some more protein. If you chop up the raisins before adding the whole dish is sweeter. - 10/12/08
