Introduction

An excellent way to use left-over chicken. Depending on the seasoning chosen, the burgers can be a spicy as you like. For a milder flavor, substitute ketchup for the taco seasoning. Ingredients

    90g / 3.5 oz instant mashed potato granules
    225g / 8 oz cold, cooked skinless chicken, shredded
    1/2 small onion, chopped finely
    1 tsp dried mixed herbs
    1 tbsp taco seasoning / sauce
    1 tbsp BBQ sauce / brown fruity sauce
    4 tbsp breadcrumbs
    2 tbsp sunflower oil

Directions

Prepare mashed potatoes according the instructions. Allow to cool slightly.
Put chicken, onion, herbs, taco seasoning and BBQ / brown sauce into a large bowl.
Mix well to combine, then stir in mashed potato.
Put breadcrumbs onto a large plate.
Shape the chicken mixture into 8 burgers, pressing together firmly.
Dip the burgers into the breadcrumbs and carefully turn over until evenly coated.
Heat the oil in a large non-stick pan. Add the burgers. Cook for 8 - 10 minutes, turning once, until golden.

    These are really good. I have made them several times and I find that mixing all ingredients before cooking the chicken works better for me. My husband and I make them every few weeks for a lunch or a light dinner on the weekends. Very flavorful and easy to put together. - 2/3/09

    I call these chicken llapingachos. Llapingachos are potato patties I'd eat in Ecuador and these taste so similar. I do not add teh BBQ sauce. I weighed the granules and breast and it came out to be 1 1/3 c granules and 1 lg. breast for me. - 4/9/10

    This was delicious. I loved it. Will definitely make this again. BTW, the patties tend to get firmer as they cool down. I had some leftover and the leftover patties were much firmer than the patties that were eaten while hot/warm. - 12/25/09

    I have made these 2 times in 2 weeks. First I used a baked potatoe and shredded it. Then I used the instant mashed potatoes. I used A-1 sauce instead of bbq sauce. I make ahead and we can just heat them for a great burger!! Flavor is great!! - 9/11/09

    I made my own taco seasoning and used crushed shredded wheat in place of the bread crumbs. Simply fabulous. Next time I will make a daal and curried veggies as side dishes. Thank you for sharing. - 7/17/09

    after reading comments, this is what I changed (and it was AWESOME!):
    used uncooked cx, mixed all in the food processor, used crushed wheat crackers to coat, BAKED on a pizza sheet with a pan under to catch the drippings.
    Turned out great w/a little dark meat in for some fat so it's not so dry!!

    I made these for dinner and everyone liked them, even my 8 yr old. It made about 5 burgers instead of 8. That is if you patty them the size of a hamburger bun. They were a little mushy but you have to remember it has mashed potatoes in them. - 1/6/09

    the potatoes were confusing to make as directed -- variable by brand . I made using nofat dry milk and water only. I skipped the cooking/cooling == not necessary. I cooked on griddle using pam not sunflower oil, used chili powder and italian seasoning
    for spices. Used electric handi chopper

    I did not like making this recipe at all...the first thing that through me off was the fake mashed potatoes...it is very messy to make and they do not stick together and are very bland even after adding double the spices...did not like this recipe at all. - 11/24/08

    This was horrible. There was nothing "spicy" about it, although I guessed that as I started making it and realized there weren't any spicy ingredients.     I agree - they were hard to keep together!!! In the end, I didn't end up with patties. They were OK but too much work went into it without much of a pay off.     These are really tasty! But they are hard to make - more like crab cakes than burgers. They easily fall apart until you finally get one side cooked crispy enough to turn them over.     This is a recipe that must taste better than the recipe sounds. Since the chicken is cooked, I wonder if it would be a good recipe for leftover turkey.
