Ingredients

1 lb. extra lean ground beef
14 oz. can no-fat refried beans
1/4 cup salsa
4 whole wheat tortillas
1 1/2 cups shredded cheddar cheese
Optional: 1/2 to 1 cup shredded carrot
Directions
Heat oven to 350 degrees.
Fry ground beef until no longer pink.
Stir in can of refried beans and salsa.
Heat mixture through.
Spray round casserole dish with no-stick cooking spray.
Lay one tortilla in the bottom of the dish and spread approx. 1/4 of beef and bean mixture on top.
Sprinkle approx. 1/4 cup of cheese over that.
Continue to layer, then top all with remaining cheese.
Bake 15-20 minutes, or until hot and cheese on top is lightly browned.
Optional: For more nutritive value, add shredded carrot to beef and bean mixture. For lower fat, use reduced fat cheese, or reduce quantity of full-bodied cheddar.

I used 93% lean ground beef. Also, I used a can of black beans for the refried. I used Rotel tomatoes with cilantro and lime and picante place of salsa, 1/2 t dried cilantro, 1 t cumin, 1T chili powder, 1 sm diced onion, 1 tsp chopped garlic and reduced fat cheese. Hubby asked for seconds! - 10/8/12

I appreciated this meal because it was quick and my daughter could make it. It was also tasty. I usually have Taco Seasoning on hand, so I add 2 T of Taco Seasoning with 1/4c of water to my cooked meat. I also diced a large tomato and used 1/2 the amount of taco sauce. I added 1 T Cliantro. - 12/22/09

This was just OK. If I had used real cheese instead of 2% Milk cheese it would have been better. But, then it wouldn't have been a very "light" recipe. I used ground turkey, 1/2 package of taco seasoning, then followed the recipe. Probably won't incorporate this recipe into my weight loss diet. - 1/11/09

My first SP recipe I tried and it was delicious! I used "spicy" fat-free refried beans and probably closer to 1/2 cup of salsa. Tastes great as is, but I think I'm going to add some sliced jalepenos and lowfat sour cream on a new serving tomorrow. Add to that the ease of prep and I just loved it! - 1/7/09

This was a great recipe!! Quick. Easy. What more could a busy mom asked for! Plus my kids didn't even realize that the tortillas were wheat. THEY LOVED IT! We did add a little sour cream to ours. Next time I'm going for the carrots and I may try a touch of taco seasoning or something similar. - 3/27/07
