Number of Servings: 6

Ingredients

    1 lb. extra lean ground beef
    14 oz. can no-fat refried beans
    1/4 cup salsa
    4 whole wheat tortillas
    1 1/2 cups shredded cheddar cheese
    Optional: 1/2 to 1 cup shredded carrot

Directions

Heat oven to 350 degrees.
Fry ground beef until no longer pink.
Stir in can of refried beans and salsa.
Heat mixture through.
Spray round casserole dish with no-stick cooking spray.
Lay one tortilla in the bottom of the dish and spread approx. 1/4 of beef and bean mixture on top.
Sprinkle approx. 1/4 cup of cheese over that.
Continue to layer, then top all with remaining cheese.
Bake 15-20 minutes, or until hot and cheese on top is lightly browned.
Optional: For more nutritive value, add shredded carrot to beef and bean mixture. For lower fat, use reduced fat cheese, or reduce quantity of full-bodied cheddar.

    It's ok. The recipe was easy to make but, I like to have a lot of color in my food. Between the ground beef, beans, and wheat tortilas it was all brown. Needs more seasoning and color. - 1/7/11

    I used 93% lean ground beef. Also, I used a can of black beans for the refried. I used Rotel tomatoes with cilantro and lime and picante place of salsa, 1/2 t dried cilantro, 1 t cumin, 1T chili powder, 1 sm diced onion, 1 tsp chopped garlic and reduced fat cheese. Hubby asked for seconds! - 10/8/12

    Great starter base.Tasted really Good, I added onion and low sod.taco seasoning and green chilies to the meat mix. For even more flavor.Topped with lettuce and tomato, fat free sour cream. Very filling. Although scooping it up on plates at first doesn't look very appetizing. Tastes good! - 4/9/12

    We loved this recipe so much---I made it twice this week. The first time I used ground turkey, a can of black beans , 1/2 jar of salsa, half onion, garlic and a teaspoon of cumin. The second time, I used two cooked, shredded chicken breasts and threw in some leftover rice as well. Yum!!!! - 10/4/11

    I appreciated this meal because it was quick and my daughter could make it. It was also tasty. I usually have Taco Seasoning on hand, so I add 2 T of Taco Seasoning with 1/4c of water to my cooked meat. I also diced a large tomato and used 1/2 the amount of taco sauce.     As a kid, my mom always mixed refried beans, ground beef and salsa together as a dip. I still do that today, for parties and such. I had never thought of incorporating that into an actual meal.     This was just OK. If I had used real cheese instead of 2% Milk cheese it would have been better. But, then it wouldn't have been a very "light" recipe. I used ground turkey, 1/2 package of taco seasoning, then followed the recipe. Probably won't incorporate this recipe into my weight loss diet. - 1/11/09

    My first SP recipe I tried and it was delicious! I used "spicy" fat-free refried beans and probably closer to 1/2 cup of salsa.     This is similar to one of our all-time favorites, which it is now replacing. ;-) We couldn't even tell the shredded carrots was added, what a nice surprise tucked inside. The wheat tortillas were better than I expected. I figured 237.6 calories and 575 mg Sodium per serving. - 3/22/07

    I tweeked the recipe by adding spices to my ground beef before mixing in the refried beans. I also added a 1/2 cup of salsa instead of a 1/4 cup and use reduced fat cheddar cheese. Also served it with light sour cream on the side. - 3/22/07
