Introduction

These tostadas are cheap and easy to make--and they're full of fiber! These tostadas are cheap and easy to make--and they're full of fiber!
Number of Servings: 4

Ingredients

    4 corn tortillas
    1 can pinto beans, drained and rinsed
    1 cup salsa
    1/2 cup shredded reduced-fat Cheddar (regular or vegan cheese, such as Daiya)

Directions

Preheat the oven to 375 degrees Fahrenheit.
Place the pinto beans in a bowl, add the salsa and mash with a fork until well combined.
Place tortillas on a baking sheet, and place in oven for five minutes, until slightly crispy. Remove from oven and divide bean-salsa mixture among the tortillas. Top with cheese, and return to the oven until beans are heated and cheese is melted, about five minutes.
Serve immediately.

    This is a yummy way to start your day too, I live in Mexico so my Kids eat refried beans, my refried beans are spread on a large flour tortilla, spoon of rice, cut up tomate,onion,cilantro, 1 scrambled egg, roll it and then just lightly brown all sides in fry pan.     I tried this with refried beans, weight watchers shredded cheese and hot salsa for a quick brown bag lunch. Wrap it up in the tortilla of choice and microwave at lunch time. Serve with a side of guacamole...yum! - 7/5/11

    suggest adding 1 tsp or cumin or chili powder; also suggest adding chopped onion, garlic, tomatoes, green peppers, shredded lettuce on top; guacomole on side or top. - 2/4/12

    I like to sue dried beans. I soak them the night before, then, in the morning, use my crockpot, some veggie broth, chili powder, cumin and an chopped onion. at the end of the day, I then use a slotted spoon to take a serving, mash them and go from there. - 9/11/12

    I used flour tortillas because that is what we had, so I didn't pre heat them at all, just put the bean and salsa mix on them and in the oven for 7 min. Added cheese for the last 3 min. Served with homemade guac. SOOOO good! The husband LOVED it. - 6/6/11

    I like to add shredded lettuce or spinach, or any fresh green, and onions. To reduce sodium, rinsed the canned beans thoroughly, it helps a lot. you could use home made pico de galo, and no salt. substitute cilantro, you won;t miss the salt. Bought fresh pico del galo usually no salt. read label - 7/6/11

    Ok-so I changed it up just a bit and sprayed my tortillas with cooking spray and crisped them up good, then topped them with the hot bean/salsa mix and cheese. Added some pickled peppers and avocado-wow. Such a fast and simple meal but super tasty. Already looking forward to the leftovers. - 2/18/12

    Thanks for reminding me about this tasty fast meal. I like mine a bit sloppier. I toast the tortillas in a dry skillet and mash the beans in a small pan and heat. Then arrange the tortilla w/ beans, then salsa, then cheese. Pop in microwave to melt. Top with lots of tomatoes, lettuce & onion. - 10/13/12

    Besides adding the salsa, I added 1 tsp of cumin, pinch of red pepper and also fresh cilantro to the beans. Spread the beans on the tortilla and top with some chopped onion and tomato. - 9/9/11

    The family liked this & it was filling. I used small white corn tortillas & was able to have 2 a piece. I also used fat free refried beans. This made the calories a little lower. Then
    we loaded them up with shredded lettuce, diced tomato, banana peppers, green peppers & onion.
