Introduction

A thick and hearty soup that is creamy without all the cream!! A thick and hearty soup that is creamy without all the cream!!
Number of Servings: 8

Ingredients

    One Acorn squash peeled (potatoe peeler works pretty good) and chopped up into chunks.

    4 cups of broccoli crowns (the prepackaged broccoli crowns is what I used for this recipe)

    Approx. 3 cups of chicken broth (can add or remove based on your preference of thickness), can also use Vegetable broth to make vegetarian style.

    1 yellow onion chopped

    3 cloves of garlic chopped

    1 cup of shredded cheese

    Salt and Pepper to taste

Directions

Place broth in a good size stock pot and add cubed sqush, onion and garlic. Bring to a boil then add broccoli. Let cook for approximately 10 minutes till vegetables are soft enough to blend. Add a touch of salt and pepper. Ladel soup into blender and puree to eliminate the chunks (may have to do in small batches). Put soup back into pot, add cheese, stir and taste. Add salt and pepper for additional seasoning and enjoy!!

    I was feeling lazy, so I pre-cooked the squash in the microwave (whole, just poke a few holes in the skin and nuke for 8-10 minutes) and used frozen broccoli. also, I was out of cheese, so I subbed a couple spoonfuls of onion dip. deeeeelicious! - 1/31/09

    I made this and it was easy to prepare. My husband and I both loved it and I would for sure make it again. I did bake my squash first, which is much easlier than peeling it. I served it with a spoon of sour cream on top. Yummy. Thanks for a really delicious recipe! - 10/21/07

    This was fantastic! I didn't peel the squash--just microwaved it until soft and then scooped out the flesh. While it was cooking, it did not look very appetizing at all, so I was skeptical. But it was delicious! - 9/22/10

    We LOVED this soup. I took the advice above and microwaved the squash first. I used much more broccoli than called for as I had alot that was about to go bad. Used about 4cups chicken broth and a bit of milk at the end. I omitted the cheese and it was still very good. Added lots of garlic too! - 3/24/10

    Five star! Will definitely make this again! Found it a little thick, so added 1 cup white wine while it simmered. And we like chunky, so I didn't puree it, just used the hand mixer on it. Delicious! - 2/7/10

    I didn't find that it was 8 servings of soup, more like 5 or 6. But it was extremely easy (except for the peeling of the sqash part) and really fast. I also added fresh parsley, because I happened to have some. It is deffinately something I would try again. - 2/21/10

    This is a VERY good soup, but I was experimenting with acorn squash which I had never had, and was disappointed that I couldn't taste it at all because the broccoli overwhelmed it. But I absolutely love it cause i am a broccoli lover! - 1/9/10

    This is really tasty. These ingredients just don't seem like they should go together, but they really work. It really does end up tasting like a nice cream of broccoli soup. Try, I bet you won't be disappointed! - 3/15/09

    Delicious. I used vegetable broth powder instead of chicken broth because I didn't plan ahead. Next time I will begin by sauteing the onions until quite brown. That will add extra flavor and make it even better. - 11/6/15

    WOW. Absolutely incredible. I love how fresh all of the ingredients are and that it's low calorie AND low carb. I used a hand mixer instead of a blender (less mess) and cooked the squash in the microwave like others suggested. So great thank you!! - 2/26/12

    As predicted, this soup is on the sweet side. I seasoned with lemon pepper and Spike, and added nutritional yeast (left out the cheese). Next time I'll bake the squash first; but for this 1st try, I wanted the whole experience of making this soup! - 11/29/11

    WOW!! Quite a surprise. I always make homemade cream of broccoli soup for the holidays, and my family is very upset that I will NOT be making it this year. I tried a 1/2 batch last night, testing several of the suggestions. No cheese, plus sour cream, and add basil. It passed Thanksgiving dinner - 11/18/11

    I loved this! Made it not quite with exact measurements, and added curry, my favorite. I cooked all but the broccoli for 10 minutes and pureed that. Then added the broccoli I had chopped small and cooked it through. I like soup with some texture so I didn't puree the broccoli at all. Fantastic! - 9/25/11

    Fabulous! Can't believe how thick and creamy it is without milk or cream! I had to use up veggies so I added a ton of celery and carrots. Nuked the squash first and added 4 whole garlic cloves. Adding cinnamon really did it for me! - 3/19/11

    This soup is flavourful and easy to make. I added a tbsp of curry powder, and swapped the grated cheese for 1/4 cup lowfat sour cream and 1/4 cup parmesan. Fabulous! - 1/17/11

    I did what most people did and roasted the squash first. I also sauteed the onion and garlic before adding the broth and veggies. At the end, after adding the cheese, I decided it needed a little something so I added a tablespoon of mustard. Delish! I will be making this again! - 1/16/11
