Ingredients

    1 tsp. olive oil
    1/2 cup chopped white onion
    2 cloves finely chopped garlic
    1/4 teaspoon fresh thyme
    1/2 cup quick-cooking oats
    1/3 cup 1% Milk
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell peppers
    1/4 cup chopped carrots
    1 large, fresh egg
    1 tsp dijon mustard
    1 cup catsup
    1/4 tsp salt
1/2 pound ground turkey, 93% lean

Directions

1. Pre-heat the oven to 350 degrees.
2. In a small fry pan, heat the oil over medium-low heat. Add the onion, garlic, and thyme and cook until the onion is transparent, or about 5 minutes. Set aside to cool.
3. In a large bowl, combine the cooled onion mixture with the remaining ingredients, except the meat. When the mixture is well blended, add the meat by hand.
4. Place the meat mixture on the baking sheet and shape into a 9X5-inch loaf. Bake for about 1 hour or until the center reaches 160 degrees F on a meat thermometer inserted into the middle.
5. Let rest for 10 minutes before serving.

This recipe is great with home-made mashed potatoes and mixed vegetables! Leftovers also go great on sandwiches for lunchtime!

It was delicious, but came out a little too soft for me. I would cut back on the liquids. - 4/19/18

This was truly AMAZING! not dry at all like most turkey meat loaf! I used more turkey (1 lb.) and a little more oats. It was delicious! peppers and onions gave great flavor. Thanks so much for this recipe! - 4/16/10

    Incredible!
My honey loves this recipe. It is very filing and has great texture. It is a bit moist so if you like a firmer meat loaf I would cut down on the liquids. But it is awesome!! - 2/6/10

    Very Good
I made this recipe this weekend and it took a very long time to firm. I made the same thing for my mom using vegan meat and it came out of the oven firm. It took over 30 min for the turkey meatloaf to firm and I followed the ingredients to a "t". Other than that it was so good. Great recipe. - 4/27/09
