Ingredients

    1 cup brown rice, uncooked
    1-1/2 lb boneless skinless chicken breasts
    1 can cream of chicken soup
    2 cups chicken broth
    1/4 tsp paprika
    1/4 tsp pepper

Directions

Pour rice into 13"X9"X2" pan and spread evenly. Arrange chicken, cut up into serving sized pieces, in pan. Mix cream of chicken soup, chicken broth, paprika, and pepper together in bowl. Pour over chicken and rice. Cover, venting one corner of pan. Bake until chicken is done and rice is tender, about one hour. Cover may be carefully removed the last 5-10 minutes of cooking.

    Made this last night! Added Onion, Garlic and crushed Red Pepper. I used low sodium ingredients, could have used a little salt :) Might add some peas next time... Yummy! - 10/12/08

    What temperature do you cook this on in the oven (for boneless, skinless chicken) - 11/11/08

    The oven temperature should be 350 degrees.

    I will probably make again, but I will also add a little more kick to it ... maybe some garlic powder, some red pepper flakes ... but, it was good ... I made it with 2 split bone-in chicken breasts, skin removed ... oh, and I cooked at 425 for an hour ... worked very well ... thanks! - 9/30/08

    It doesn't say how long to cook it. Some of us who don't cook much need all the instructions we can get! I know it says 65 minutes to prepare and cook... but, again, it takes some of us 10 minutes to figure out how to use the can opener! But it sounds really good. - 8/26/08

    My apologies - I didn't realize that I hadn't specified how long to bake. It should back about an hour.

    Very Good
    I find that 1 hour is not sufficient to get the brown rice done. The directions on the bag says to cook it 45 minutes by itself, so with several pieces of chicken, I bake it for 1 and 1/2 hours covered. Then it's done. - 3/26/19

    Just put in the oven. I used cream of celery since didn't have chicken soup. Added fresh broccoli, dash of red pepper flakes and garlic powder. Can't wait. - 10/8/13

    Very easy, family friendly recipe! I used short grain brown rice, so I had to cook it longer, and at 375' for almost 80 minutes. The vented foil cover kept the chicken from drying out. I will make this again for sure. Nice job micromouser! Thanks! - 9/20/12

    I am eating this right now, and it's delicious, easy to make and very economical! I used water instead of broth and added a bit of turmeric instead of the paprika and pepper, but my husband devoured his and he is the pickiest eater I know! - 8/7/12
