Ingredients

    2 cups eggbeaters
    2 tbsp. water
    1/2 cup chopped broccoli
    1/4 cup chopped onion
    1/4 cup chopped peppers
    1 cup shredded 2% cheddar cheese(DIVIDED)
    2 tbsp. fresh basil chopped
    salt and pepper

Directions

Preheat oven to 350
Spray muffin pan with cooking spray(spray well)
in a medium bowl mix egg and water
add 1/2 cup of the cheese,veggies,basil,salt and pepper
divide mixture evenly into 12 muffin cups
bake 20 min.
sprinkle the tops with remaining cheese and bake an additional 5 min. makes 6 servings.2 mini frittatas each.

    Fantastic!! I made a batch Sunday and kept them in the fridge to eat for breakfast every morning. The protein and veggies keeps me full until lunch, and they're so much better than my standard cereal. - 3/12/08

    Excellent. You can put almost anything in them. I used cubes of ham, cheese, red pepper and onions because that's what I had available. Great for kids to eat on the go if necessary- it holds together well, so kids can eat with their hands. - 1/9/08

    Great recipe! You can put almost anything in them. I do some with just ham and cheese for the kids, and load up on veggies for mine. Wrap and refridgerate the leftovers for a grab and go breakfast! - 1/10/11
