Introduction
Healthy and low in fat, this slow cooker turkey breast is a perfect alternative to roasting a whole bird--especially if you prefer white meat. Ingredients

1-2 bay leaves
1 medium onion, quartered
3 cups no fat/low sodium chicken broth
4 - 5 whole black peppercorns
2 - 3 lb fresh "raw" turkey breast with skin removed
Tips
Please note that the turkey will NOT look like the picture. The turkey is basically boiled in the chicken broth and will be tender and flavorful. You can slice and serve or shred and use in casseroles, etc.
Directions
Remove skin and all visible fat. Place the turkey breast in the crockpot, add onion quarters, bay leaf, and peppercorns. Cover with chicken broth.
Turn crockpot on high for the first hour and then to low for 6-8 hours.
Remove from broth and serve. Turkey will be moist and delicious!

I used a 3lb. turkey breast. Sprayed crock pot with olive oil spray. layered bottom of crock with pieces of whole wheat toast with chopped onion and chopped celery. Rubbed the turkey with olive oil then poultry seasoning, basil, sage and rosemary and laid turkey on top of toast mixture. Awesome! - 1/2/14

over 1000 mg of sodium per serving?!?!?! that certainly isn't healthy at all. If you are using the slow cooker, you don't need any broth at all. just roast on low... it should be juicy without all the broth and sodium. - 11/26/13

Thank you for your reply. You are correct. However, I use fat free, low sodium chicken broth for flavor and I use a fresh turkey breast without skin. I adjusted recipe to reflect "raw" turkey and low sodium broth. I used preloaded nutritional info for the raw turkey but am not sure it's accurate.

I've tried to do a turkey breast in the crockpot, and there is no way you're going to get crispy-looking skin like in the picture. The breast was moist, but the skin will be like rubber. - 11/26/13

Thank you for your reply. I have since edited my recipe to let others know that the skin should be removed. This is a "low fat" recipe and yields a moist and delicious turkey that can be served on it's own or shredded for sandwiches/casseroles.

I make this all the time (no broth- just water) ~ the turkey breast comes out so moist & delicious. I serve it with Roasted Veggies & Small Cut Up Red Potatoes all roasted together, quick easy meal for someone that works all day. I can still have the kids (adults) over on a work night for dinner. - 10/11/14

Thanks for the tip. I've never tried it with water and will definitely give it a try. We love this turkey. We have a meal or two and I have enough for lunch a couple of days. A friend suggested diluted apple juice/apple cider. Haven't tried that though.

If crispy skin were an issue, I could only rate this as "very good," but I don't eat the skin, anyway. I did add some celery and poultry seasoning and used no-salt-added broth. This was very tender and tasty. I will definitely make this again! - 11/30/13

Thanks for your reply. The picture does not reflect the recipe. The skin is removed before cooking so there's nothing crispy at all. I have added onion, celery and poultry seasoning and enjoyed it as well.

This is a great way to do a turkey breast. When I crock pot it, I put the stuffing mix with cranberries in the pot with it; very delicious. This year, I could not find a half-breast, and I won't use those with all the additives, so did a 6 lb breast in the larger crock. Love the leftovers! - 11/26/17

I don't think that a turkey breast in the slow cooker is going to look visually appealing without any kind of browning. It must of been one step you forgot to mention since your photo shows it crispy looking! - 11/26/13

Thank you for your reply. I didn't add this picture and it doesn't represent the finished product at all. The skin is removed before cooking and the turkey breast is basically boiled. It's excelllent if you're trying to eat low fat/low sodium and very moist and tender.

I'm going to assume this picture is for another recipe because I don't see how the breast will get that nice roasted brown color unless you brush it with some kind of artificial browning sauce like Kitchen Bouquet. - 11/26/14

Thank you for your reply. You are correct--the picture does not reflect the finished product. The skin is removed and the breast is basically boiled. However, the meat is so moist and tender, it is delicious. We will have sliced turkey one meal and use the leftovers for turkey enchiladas, etc.

The full nutrition stats show that it was figured using turkey luncheon meat and Swanson's broth hence the HIGH sodium content. Can be reduced a great deal using fresh turkey breast and lo-sodium broth or no-sodium bouillon. - 11/26/14

Thanks for your reply. Yes. I posted this recipe when the recipe box was released. I just logged on for the first time since 2010 or before and updated the recipe today to reflect raw turkey without skin and no fat/low sodium chicken broth which lowered sodium count significantly.

Sorry to be so late to reply. I do not brown the meat at all. The turkey breast is basically boiled. It will look like a turkey roasted with the skin removed. The meat is extremely moist and tender and when sliced, you don't notice it's not browned. Leftovers make great sandwiches & casseroles.

My family only likes white meat....so this would be perfect for thanksgiving. Can someone tell me if they've tried using a thawed out whole turkey breast - like bone in, two breasts?

I use a fresh, raw 1/2 turkey breast with bones (no skin). I have used a boned, whole frozen turkey breast. If it will fit in your crock pot, it will cook. Remember to remove the skin. Remove from broth and let rest, then separate meat from bones and slice to serve. Very moist and tender.

My turkey breast turned out red. I don't think covering it in broth was a very good idea. The broth had to be tossed out. Think I will try roasting it in the crock pot the next time. - 2/25/09

I'm so sorry to hear this didn't work for you. I've made this many, many times and it always comes out looking like perfectly cooked turkey--extremely moist and very delicious. We do this at work frequently and share the turkey for lunch with steamed veggies--so easy and delicious!
