Ingredients

1 lb lean ground turkey
1/2 small onion (chopped)
3 cloves garlic, minced
1 14.5 oz can diced tomatoes (undrained)
1 1/4 cup water
16 oz tomato sauce (no salt added)
1 tsp dried parsley
1 tsp dried oregano
1 tsp black pepper
2.5 cup broken up lasagna noodles
1 cup low fat cottage cheese
1/4 cup grated parmesan cheese
1/4 cup egg substitute
Directions
In a large skillet, brown ground turkey with onions, garlic, and green pepper. Drain.
Add tomatoes, tomato sauce, water, and seasonings.
Bring to a boil, stirring occasionally.
Reduce heat, over, and simmer 20 mins or until pasta is tender.
Combine cheeses and egg.
Add the cheese/egg mixture to the skillet in heaping spoonfuls.
Cover and cook 5 mins more.
Sprinkle with parmesan if desired

Flavor is good but written recipe needs a little work. Green peppers are mentioned in directions but not in ingredients plus we are not told when to add the pasta (I know it's with the tomatoes but it should still be mentioned). I'll try draining cottage cheese next time -- came out a little loose. - 1/1/11
